This perfect summer grilling recipe cooks quickly and is very flavorful!

Marinade
1 jalapeño, stemmed, seeded, and minced
3 tbsp olive oil
6 garlic cloves, minced
1 tsp grated lime zest
5 tbsp lime juice (3 limes) 1/2 tsp salt
1/2 tsp ground cumin 1/4 tsp cayenne pepper

Shrimp
1/2 lb large shrimp, peeled & deveined
1/2 tsp sugar
1 tbsp minced fresh cilantro or parsley

Directions
Process marinade ingredients in food processor until finely ground, ~20 seconds.

Reserve 2 tbsp for finishing cooked shrimp. Transfer remaining marinade to medium bowl.
Add shrimp to bowl with marinade and toss to coat. Cover & refrigerate 30-60 minutes. Thread shrimp tightly onto skewers, alternating direction of each shrimp. Sprinkle 1 side of shrimp skewers with sugar.

Heat grill until hot, with one cool side. Grill shrimp sugared side down over hot part of grill, uncovered, until lightly charred, 3-4 minutes.

Flip skewers and move to cooler part of grill. Cover & cook until shrimp are pink, 1-2 minutes.

Use tongs to slide shrimp off skewers into medium bowl. Add reserved marinade and cilantro or parsley and toss to coat. Serve and enjoy!
