Logan Bjornson, our Client Concierge, has shared her delicious recipe for a tasty Taco Soup.
This simple dish is a staple recipe at Logan’s house during cooler weather. It’s a great crock-pot recipe to feed a crowd, and your house will smell amazing while it bubbles away!
Ingredients
- 1lb ground beef or turkey
- One onion (diced)
- Can of corn (drain 1/2)
- Can of black beans (drain all)
- Can of kidney beans (drain all)
- Can of Rotel original
- 2 cans of diced tomatoes
- 1 package of taco seasoning
- 1 package of ranch dip seasoning
- Shredded sharp cheddar cheese
- Sour cream
- Chips for dipping (Scoops or Fritos)
Directions
Cook diced onion in skillet with olive oil until softened.
Add ground beef or turkey in skillet until browned.
Transfer to crock pot.
Open everything else and put it in the crock pot on low for 6-8 hours. (or simmer in a big pot until it’s ready).
Serve in bowls topped with cheese and sour cream, with chips on the side for dipping into this delicious soup.
